Coconut oil is a beautiful stone fruit from the mythical "tree of heaven", celebrated as a true god in tropical countries.
The glamorous virgin coconut oil from this fruit is prized by Hollywood stars for its cosmetic and gastronomic qualities, and its ability to add meaning to any dish.
This congealed oil is produced from the pulp of the fruit, which is grated into very fine strips. These are dried naturally at a rigorously controlled temperature, then cold-pressed in small screw presses. Compared with other oils, it stands out for its solidity, obtained at room temperature below 25 degrees. Its immaculate color is immediately appealing. On the nose, the pure yet persistent flavors of coconut emerge in all their subtlety. When cooked, this oil liquefies and brings all its complexity and exoticism to cucurbits, poultry or desserts, without the exuberance of the original fruit.
