This infusion of cinnamon bark in small pieces is perfectly suited to the preparation of herbal teas, wines and hot fruit juices (grapes and apples work wonders). This cinnamon is called "Ceylon" and comes from a variety of trees that grow naturally in Sri Lanka and throughout southern India.

Infuse one tablespoon (or more, to taste) per cup of boiling liquid. Boiling for several minutes over low heat will release the aromas.

Cinnamon is the inner bark of the Ceylon cinnamon tree (Cinnamomum zeylanicum), a species of tree in the laurel family native to Sri Lanka, 10 to 15 meters tall with glossy green leaves. The cinnamon tree grows in tropical maritime climates, at low altitude, in sandy soil.

Its bark has been used for centuries as a spice, for its sweet yet pungent flavor. As it dries, the bark curls up on itself, which is why cinnamon takes on a stick-like shape. Harvested in the rainy season, it is either finely ground or presented in sticks to spice up pastries, compotes, herbal teas and exotic dishes.
