Lavender honey melilogy

Origin: France - Harvested by the beekeeper in the plains of Haute Provence (04).

Montélimar's famous nougats, much appreciated by young and old alike, are traditionally made from Lavender honey (of which there are several varieties). A Mediterranean plant par excellence, Lavender has long been the almost exclusive preserve of Provence (whose honey now benefits from an IGP for beekeepers wishing to join the scheme). For some years now, their cultivation has also been exported to certain Eastern European countries and even colder countries such as Canada, thanks to the use of adapted plants.

To preserve all the flavors and qualities of honey, do not heat it above 37°C: to make it a little more liquid if necessary, prefer exposure to lukewarm heat such as a radiator or bain-marie over low heat.
