Chestnut Honey Melilogy

Flavors: A strong, woody aroma with an attack of caramel and nuts, finishing on a warm note of prune.

Texture: A very liquid honey with very slow crystallization.

Origin: France - Harvested in northern Isère (38).

Until the 40s, beekeepers in the Cévennes (and elsewhere) created their hives from the trunks of old chestnut trees: once hollowed out, the swarms could set up their colony. Moreover, beekeeping and chestnut forestry are linked by similar ecological issues: in the Cévennes, Ardèche and Haut Languedoc in particular, numerous research partnerships have been established since 2014 with INRA to jointly combat the Cynips, a parasite of the chestnut tree.
