Yacon (smallantus sonchifolius), also known as "earth pear", is a tuberous perennial related to Jerusalem artichokes and sunflowers. Its flower stalks can reach 2m in height, and its tuber is characterized by a slightly sweet taste, reminiscent of apple and watermelon. It grows spontaneously in Andean regions (Peru, Bolivia, Ecuador, etc.), in mountainous areas at altitudes of around 2000m. Some populations eat it as a fruit, others as a vegetable.
