Chia (Salvia hispanica) is a species of sage native to Mexico and Guatemala, which gave its name to the Mexican state of Chiapas (waters/river of chia). Chia seeds (which means "strength" in Mayan) were cultivated by the Aztecs and Mayans, who were already aware of their special properties. At the time, chia seeds were the third most important plant food source in their diet, after corn and beans. The Tarahumaras, a people living in the northern Mexican state of Chihuahua who are renowned long-distance runners, have a recipe for a food that makes them slender, strong and tireless: "iskiate", obtained by dissolving chia seeds in water with a little sugar and lemon juice. These seeds are known to be part of the "endurance food" of the Aztecs and native tribes of South America. Chia seed flour can be used in a wide variety of recipes, including pancakes, waffles and breads.
